What is the best all around WWII flight Sim, for........

Windows PC, Playstation one, N64, or Dreamcast?
I have purchased several WWII flight sims, and have been very disappointed in them. It is quite frustrating when your nine year old son is better able to operate the controls, then you are!
Although, I am not the most coordinated person in the world, I do quite well on most games.
I am looking for something that is:
A) user friendly, (I bought one sim that had a users manual with 700 pages in it. Not looking to get my pilot's license, thank you very much! ;-)
B) historically accurate,
C) offers more than one airplane,
D) is not so darn touchy that you end up ditching the plane every time you bump the joystick!
Any help would be very greatly appreciated! Thanks guys!
