A combination of both I think.
You are correct that what are now the polders, was just an enormous strech of water (the Zuyderzee) during the war. But although very large, the lake isn't very deep, the general depth is about 3 or 4 metres with some spots being 7 metres.
If an aircraft went in at high speed the majority of the wreck would bury itself deep into the mud. If you look at wrecks in the northern part of the lake, where the bottom consists of sand, the wreckage tends to lie on top of the sediment and not buried very deep. Only shifting sands can cover a wreck here.
The majority of the lakebottom is thick mud and here most wreckage lies deeply embedded. The wreck of DV286 lies completely submerged in a thick layer of mud. Difficult to recover but excellent for conservation, and it is an freshwater lake as well.
