DEPRECIATION!
When the plane is first restored with a new engine, new paint, etc.- it is at a maximum value. Put a few hundred hours of flight time in and you add wear, hangar rash, oil on the cockpit floor, threadbare interior, worn tires, etc.
Also, don't forget that many owners are ready to move on to a new challenge. The restored plane no longer commands the same interest to the owner as when he (or she) was researching history or scrounging for parts, i.e. involved in the rebuild.
After all, more time is spent on this list wondering when a restoration will be flying than whether it flew 15 or 35 hours last year... The creation of a flying machine sometimes holds more interest than the flying alone. Look at how many homebuilt aircraft are sold upon completion. Some just enjoy the building!
