Charles, I empathize completely. The time element (or lack of, actually) just means you have to be a little more creative with the situation (ok, a LOT more creative!).
Would a nearby project team allow you to work on certain pieces at home? Heck, wet sanding pieces of airplane isn't very glamorous work, but it needs to be done and even a six-year-old could help. What a thrill for your little one to be working on pieces of a "real airplane"! That's pretty much where my kids started, and last year the oldest one joined me in hauling the remains of a Cornell from Maine back to our home in Wisconsin.
Have fun raising that family AND pursuing your hobbies!
