Good question.

I attend fly-ins as a photographer. I enjoy it best when there's a variety of types present, especially when something I've not seen before shows up - of course that's just luck - the organizers can't control every aspect of this!

I like being able to get access to the aircraft for photos. Some fly-ins you can just wander about, whereas others use barriers. I've found that most places will let you pass the barriers if you're air-side-aware and are going in for a good reason.

Naturally, good weather helps ;-) As does a supply of tasty burgers/beer and a proper toilet facility. A bar is useful for attracting pilots, too ;-)
