While your seeing all of the excellent aviation stuff in central FL, I highly recommend a visit to "skyventure" (albeit a bit of a stretch to aircraft related - but excellent flying none the less). It is a skydiving simulator wind tunnel. I've been there over 25 times and by my calculation have spent over an hour flying my body - very addictive. It's just south of I-4 by Universal studios.
