As for why they are under represented or "ignored". They are not very common, and most are extinct. Very few collectors even have big parts of them and engines and rottables are nonexistent. TFC has that Hawker, Planes of Fame the P-26 and Seversky, but there is very little between the wars. None of it "won the war" and most was scrapped during. History is written by the survivors, and extant aircraft facilitate the process. Look at how the Blenheim book revived the forgotten bomber...

As for the most important prewar/WWII needing restoration, I propose the B-17 C 40-3097 "The Swoose" ..
