Brazil:
Spitfire - flyable, at the Museu do I don't remember the name.
Also a Corsair.
Several T-6s, Stearmans, in Paraguay and Argentina; Chile operates a museum at Los Cerrillos, with a few flyable aircraft (T-34 comes to mind). Mexican AF has at least one flyable Stearman.
In El Salvador, there is a Fouga flying (privately owned) and a C-47 is under restoration; at least two Stearmans fly in Guatemala.
Static is something else, since there are many museums, but the ones that are up and coming are the one in Brazil, the name I can't remember from above, plus the museum in Honduras (with real gems, like Soto's Corsair, a P-63, a NA-16, amongst others) and the Museum in El Salvador is also going to be a must see place.
If you want more specifics, I can begin a slow dig out of data.
