My opinion....
Aircraft built from multiple donor aircraft or new builds can be built into anything you want.
Aircraft that are essentially a single aircraft identity should probably be restored though if you have to do a major rebuilt (say rebuild the fuselage from scratch) then it doesn't matter that much. If you don't like it then buy the aircraft and put it the way you want it. Historical aircraft shouldn't be mutilated but if they already are then no real harm is done.
But like you said, the individual shelling out the lucre has final say.
